It has been far too long since I've written post. (In my defense, I'm currently working five different jobs, and feel like I barely have time to sleep). That said, I came across this recipe for Fried Chicken and Waffle Sandwiches, and knew it had Foodie Friday written all over it... Enjoy!

Lemon-Thyme Bruschetta

Today’s Foodie Friday post is dedicated to one recipe: Lemon-Thyme Bruschetta. I had something similar once at Colonie in Brooklyn and it’s been on my mind ever since. I made this version for the first time on Thanksgiving, and was so smitten with it, that I made it again two days later, for a “Friendsgiving” meal. It’s easy, quick, and best of all, super delicious. So, bookmark it, pin it and file it away. You never know when you’ll need an appetizer at a moment’s notice. (Two notes - Season with lemon zest, salt and pepper to taste. I added half a lemon more of zest to mine. Also, use the best ricotta you can find. It truly makes the dish.)

Foodie Friday 11.9.12

Chocolate Eclairs

At this point in our relationship, I think it's only fair that I tell you - I am a chocoholic. And not one of those that sneaks their addiction either, no... I will blatantly feed my urge right out in public. But don't get me wrong, I do have some control. For example, I do not have to eat a whole cake in one sitting. One large piece, maybe two (if it's breakfast time), will suit me just fine. And I'll even eat desserts made without chocolate... sometimes. But ultimately, my heart belongs to the cocoa bean; and the darker, the saltier, the gooier, the better!

Here are some recipes that get my sweet-tooth aching and my heartbeat racing...


Like most self-respecting chocoholics, I love chocolate chip cookies. In fact, I could probably do a whole post on the tasty morsels, all on their own. (Maybe another time?) But for today, I'm going to stick with this one recipe, the granddaddy of them all. I mean, seriously? Nutella, brown butter, sea salt, and chocolate?? Oh, yeah...

S'mores Cake
I mentioned what a fan I am of the ooey, gooey, right? Well, this recipe takes the cake (literally) - with graham crackers, ice cream, chocolate, and toasted marshmallows. Definitely drooling over this one.

Salted Dark Chocolate Espresso Cookies
Chocolate and coffee have always been a killer combination, and these cookies do this dynamic duo proud. Best grab a bit of milk and hunker down...

Warm Chocolate Pudding Cakes with Caramel Sauce

Another pairing that's tough to beat is chocolate and caramel. (Don't these little cakes sound perfect for winter's first snow?) Yummy!

Carmelitas
These tasty-looking treats have been on my radar since last Spring. (Which apparently, is not a season that you can find caramel squares in the store.)  With the advent of colder weather though, I'm hoping my luck will change. If not, I'm taking to the internet, because these are a definite must-try for me!

Foodie Friday 10.7.12

Savory Spring Onion and Pancetta Waffles

Ok, so maybe it's Sunday, and not Friday, but...  Two years ago I had the insane desire to make savory waffles. I searched everywhere for recipes, but couldn't find much of anything on the salty side of sweet to inspire me. Until now. When I came across Salted & Styled's recipe for Savory Spring Onion and Pancetta Waffles, I knew that this was the pocketed wonder that would launch my savory waffle sojourn. Rich, salty Italian bacon, fresh green onions and dollops of maple butter... Seriously?? 

Yep, I'm making this one tonight!

Foodie Friday 9.21.12

Smokey Corn Chowder with Shrimp

With the arrival of Fall and the slight chill in the air, my mind has begun to turn to thoughts of soup. Sadly, I had not prepared for this moment when I went shopping earlier in the week, so when the desire struck, I had to improvise. One such improvisation was to use the above recipe as inspiration for modifying a store-bought can of chicken and wild rice soup. I took some shrimp I had on hand, tossed it in olive oil, salt and pepper and grilled it. I then defrosted some frozen corn, added salt and pepper, and grilled it too. I added both to the canned soup warming on the stove, along a few tablespoons of milk, and finished it all off with a liberal amount of paprika and (more) pepper. Voila! Chicken and rice soup that was so much more... (Next time, I'll planned ahead and try the soup recipe above. Still, it's nice to know what I can pull together in a pinch!)

Caprese Soup

Caprese salad is one of my favorites in the summer. I love the idea here of extending the season a bit longer with a cheesy, tomato-y version of French onion soup.

English Onion Soup with Sage and Cheddar

Speaking of French onion soup, this was my other go-to for an unplanned soup week, and I again used what I had on hand. In this case, it was Trader Joe's French Onion Soup from the freezer. Have you ever tried it? Not too shabby for those times when you're feeling to lazy to make soup from scratch. (I know it's crazy, but years ago I bought two ramekins exactly the right size for baking this soup - 4"dia., 2 1/2" h. I've never regretted it.)

Again, next time, I'm trying this English Cheddar Soup from chef Jaime Oliver. (I love the idea of adding sage and cheddar!) 

Chicken Provencal Stoup

This is one of my tried and true staples of Fall (and winter), and I've been making to rave reviews for years. The olive tapenade absolutely makes the dish, (although the Herbs de Provence don't hurt either)!

Foodie Friday 9.14.12


It's kind of crazy, but I never really starting cooking eggs until about five years ago. In all my years growing up, I would avoid them. I was ok with hard-boiled eggs and deviled eggs, but if I was going to eat them scrambled, someone else was going to have to make them, and there had better be a lot of other stuff scrambled in with them. When I went out for breakfast or brunch, I would usually order one of the sweet options - waffles, french toast or pancakes. 

That all changed early on in my relationship, when my boyfriend started making me his favorite scramble - eggs, sausage, polenta and Parmesan cheese. It wasn't fancy, but it was made with love, and soon I found my view on eggs changing. So much so in fact, that I began to bookmark recipes and make them myself. 

Here are a few that I've made or am anxious to try...

Croque Madame French Toast Cups

A middle ground of sorts, this Croque Madam combines my old favorite, french toast, with salty ham, Gruyère and a baked egg. How can that not be good?


Caprese Eggs Benedict

In general, I'm a big fan of eggs benedict, and to this day, it's the only egg dish I'll order with any regularity at a restaurant. This caprese version, with basil and tomato, looks delicious. 


Shakshuka (Eggs Poached in Spicy Tomato Sauce)

I'm intrigued by the idea of poaching eggs in tomato sauce, and am dying to try this dish. The flavors sound amazing.

The Spanglish Sandwich

Created by Thomas Keller, this recipe was developed specifically for Adam Sandler in the movie Spanglish. It's like a BLT with egg and cheese. Yummy!


Avocado Toast with Poached Egg

I've posted before about my love for avocado toast, but this version takes it to a whole new level with the addition of cilantro and a poached egg.

Foodie Friday 8.31.12



Summer… I hardly knew ye…

As the first day of the long Labor Day weekend, today reminds me that the end of summer is drawing near. A summer, which for me, passed in the blink of an eye (or rather a graduate school-induced stupor). Where did my   sun-filled, lazy days go? My gritty-sand beach excursions, my patio soirees, my drinks on Rittenhouse Square? True, being in school, they’ve been sporadic at best for the past few years. But this summer has definitely been the worst. So, today’s Foodie Friday is an ode to summer; not a memorial for days gone by, but a celebration and an invitation to embrace the warm days that remain...

Ditch Plains Clambake

Whether it's a full-sized spread for ten, or an individual bowl of my own, the combination of seafood, corn and potatoes always reminds me of endless beach days, sunsets, family and friends.

One-Pot Clambake

Summer is the season for tomatoes, and I find I tend to make every tomato-centric dish I can get my hands on during this time. A favorite is Tomato Bread Salad with Herbs (a panzanella of sorts), but this Chorizo and Tomato Salad looks pretty delicious, too.

Another summertime flavor I drool over is grilled or roasted fruit, and this recipe from Martha Stewart is fantastic. Definitely add the goat cheese, as suggested.

And where would summer be without ice cream... ooey-gooey, creamy, ice cream? There are so many flavors to love. Strawberry may be the gold standard of the season, but I think this coffee-hazelnut sounds to-die-for!

Lastly, I give you the icon of summer camp and campfires everywhere - the s'more. And while I love the classic version, with its crunchy graham crackers, melted chocolate and toasty marshmallows, I will admit that this peanut-butter one has me entertaining traitorous thoughts...

Foodie Friday 8.27.12


Ok, so today isn’t technically Friday. But as I wasn’t able to post a “Foodie Friday” post last week, so I’m posting one today. (Hey, it’s my blog… I can do what I want.)

The star of today’s post is avocado toast. Have you ever tried it? I just made some this morning, and man, I forgot how good it is! First of all, I grew up in California, so it pretty much goes without saying that I love avocados. (Seriously, love.) But multi grain toast smothered with that rich creamy goodness, grape tomatoes, red pepper flakes, salt, pepper, and a squeeze of lime for brightness? A-ma-zing.

Foodie Friday 8.17.12

You might have noticed that to right under the title “On My Nightstand,” is a book called Salad for Dinner: Complete Meals for All Seasons. It’s a beautiful book, one with tons of pictures of fabulous looking salads, and one that my sweetheart and I immediately flagged recipes in as soon as I received it. And you know what? I have yet to make a single recipe. Until tonight. Tonight my sweetheart gets home from a two week long trip, and to celebrate, I've decided to make one of the salads he flagged (yes, we marked our favorites with color-coded post-its). I also happen to have shrimp on hand, which is a bonus.

Spinach Salad with Grilled Shrimp and Peppers (serves 4)

1 lb. lg shrimp, peeled and deveined
2 T. extra virgin olive oil
2 garlic cloves, pressed
8 oz. mixed mini bell peppers
8 c. baby spinach leaves
2 c. cherry tomatoes, cut in half
2 Persian cucumbers, sliced into rounds
½ sm. Red onion, thinly sliced
Mediterranean Lemon Dressing (see below)
Feta cheese, crumbled
Lemon wedges
Pita crisps, pita bread, or Garlic Naan Crisps (below)

Combine the shrimp, olive oil and garlic in a bowl. Cover and chill 1 hr. or overnight. 

Prepare a grill to medium-high heat. Add peppers to the shrimp and stir to coat with olive oil. Grill the shrimp and peppers until browned and tender, turning once or twice, about 6 minutes. Transfer the shrimp and peppers to a plate.

In a very large bowl, combine the spinach, tomatoes, cucumbers, and red onion with the Mediterranean Lemon Dressing and toss to coat. Add the warm shrimp and peppers and toss lightly. Divide the salad among plates. Sprinkle the salads with feta cheese and oregano leaves. Garnish the salads with lemon wedges and Pita Crisps and serve.

(Let the record show that I will be using large grape tomatoes instead of cherry ones, as Whole Foods was out of cherry tomatoes. Let the chips fall where they may.)

Mediterranean Lemon Dressing (makes about 2/3 cup)

1 T. tahini
2 lg. garlic cloves, pressed
½ t. kosher salt
¼ c. freshly squeezed lemon juice
1/3 c. extra virgin olive oil

Combine the tahini, garlic, and salt in a medium bowl.  Gradually whisk in the lemon juive, then the oild oil.

Naan Garlic Crisps

3 T. butter
1 garlic clove, pressed
1 T. finely chopped fresh cilantro
2 pcs. Naan or pita bread

Preheat the oven to 425°F. Melt the butter in a small saucepan over low heat; stir in the garlic and cilantro. Brush the breads evenly with the melted butter mixture. Cut the bread into 1 ½ -inch-thick slices and arrange on a heavy large baking sheet. Bake until golden brown and crisp, about 8 minutes. Let cool completely.

Sounds delicious, don't you think? (Fingers crossed, I pull it off.)


UPDATE: I’m happy to report that all went well and that the salad on the whole was quite tasty. The roasted peppers were especially delicious. I halved the recipe, but forgot I was doing so when marinating the shrimp, so they were probably a little more garlicky than the author intended. (Luckily, we like garlic, so it wasn’t an issue!) I’m a little on the fence about the tahini in the dressing. I didn’t dislike it, but I might try omitting it next time for a dressing that's a little cleaner and brighter in flavor. I’m also thinking of making a variation that incorporates cannellini beans…
